Chicken Tacos Santa Fe

2 tablespoons canola oil
1 -- lb.ground chicken
1/2 cup chopped yellow onion
2 -- garlic cloves, minced
3 tablespoons chili powder
1 tablespoon cumin
1 teaspoon garlic salt
1 teaspoon black pepper
1 cup canned fire roasted tomatoes,chopped
2 cups canned pinto beans,drained and rinced
6 -- indian fry bread rounds or pita bread
1 cup shredded monterey jack cheese
2 cups shredded lettuce
1/2 cup sour cream
1 clove garlic,peeled
1 -- chipotle pepper in adobo sauce
1/4 cup chopped cilantro
1 tablespoon olive oil
1/2 teaspoon salt
2 -- tomatoes,seeded,chopped


Heat oil in a large skillet,add ground chicken and cook 5 minutes over a medium-hi heat.Add chopped onion and garlic cook 3 minutes.Add spices,fire roasted tomatoes and beans.Simmer for 15 minutes over medium heat.

Combine sour cream,garlic,chipotle pepper,cilantro,olive oil and salt in a blender or food processor,blend until smooth.fold in chopped tomatoes.

Warm the fry bread or pita bread,Fill with chicken mixture,top with cheese and lettuce,spoon on desired amount of the creamy tomato chipotle salsa.Serves 6
