Multi-Grain Walnut Quick Bread

1-3/4 cup all purpose flour
1/2 cup brown sugar
1/2 cup finely chopped California walnuts
3/4 cup seven grain cereal
1 tablespoon baking powder
1-1/2 teaspoon cinnamon
1/2 teaspoon ground allspice or cloves
1/2 teaspoon salt
1-1/4 cup non fat milk
3 tablespoons canola or vegetable oil
3 -- egg whites


  1. Preheat oven to 375F.  Grease and flour an 8 ½ x 4 ½ x 2 ½ inch loaf pan, or spray it with non-stick coating.

  2. In a medium bowl, place the flour, brown sugar, walnuts, seven grain cereal, baking powder, cinnamon, allspice or cloves and salt.  Stir and toss together until completely mixed; set aside. 

  3. In a small bowl, whisk together the milk, oil and egg whites.  Add to the combined dry ingredients and beat just until the batter is blended. 

  4. Scrape into the prepared loaf pan and bake for about 50-55 minutes, or until a toothpick inserted in the center of the loaf comes out clean.  Cool 10 minutes in the pan, then turn out to a rack to cool completely.
