Morgan Red Beans

  • Yield: 6 servings


1medium onion, chopped
1medium bell pepper, chopped
1pound medium sausage
2cans (10-ounce) diced mild tomatoes and green chiles
2cans (15-ounce) red beans, do not drain


  1. Brown onion, peppers and sausage in a large skillet.
  2. Add remaining ingredients and simmer for 1 hour over low heat.
  3. Serve over rice.
