Monkey Muffins

  • Yield 1 dozen


1/2 cup chopped walnuts, divided
1 1/2 cups whole wheat pastry flour
1/2 cup oat bran
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 cup honey
2 -- small eggs
1/4 cup canola oil
1 teaspoon vanilla extract
2 -- medium bananas, mashed
1/4 cup yogurt, plain or vanilla
1/4 cup lowfat milk
1/4 cup mini chocolate chips


  1. Preheat oven to 400 degrees.
  2. In a food processor, add 1/4 cup walnuts and pulse until crumbly.
  3. Add flour, oat bran, baking powder, baking soda, cinnamon and pulse until well mixed.
  4. In a large bowl, beat together honey, eggs, oil, vanilla, bananas, yogurt and milk. 
  5. Gently, fold dry ingredients into wet.
  6. Stir in 1/4 cup chocolate chips.
  7. Divide mixture into muffin pan lined with paper muffin cups.
  8. Sprinkle with remaining walnuts.
  9. Bake at 400 degrees for 5 minutes, reduce heat to 350 and bake for 10 minutes.
