Mom’s Banana Nut Bread

  • Yield 8-10 servings


1/2 cup Vegetable Oil
1 cup Sugar
1 Beaten Egg
1/2 teaspoon Baking Soda
3 tablespoons Milk
1/4 teaspoon Salt
1 teaspoon Baking Powder
2 cups Flour
1 cup Mashed Bananas
1/2 cup Chopped Pecans
1 tablespoon Fresh Lemon Juice
1 teaspoon Vanilla


  1. Preheat oven to 350.
  2. In Large bowl: Cream the oil and sugar. Add 1 beaten egg.
  3. Dissolve 1/2 t. soda in the 3 TB of milk.
  4. Add salt, baking powder, flour, bananas, nuts, lemon juice, and vanilla. Mix well.
  5. Spray your pan with Pam and fill only 2/3 full. You can make a large loaf or mini loaves, check your time when using mini loaves.
  6. For large loaf bake at 350 for 1 hr. I recently used a Bundt pan, perfect for slicing, cook for about 50 minutes.
  7. Freezes well.
