2large ripe tomatoes
1medium red onion, minced
1medium green bell pepper, minced
3/4cup red wine vinegar
1tablespoon minced cilantro
1tablespoon minced parsley


  1. Mix all the ingredients in a nonreactive bowl. Cover and refrigerate 1 hour before serving; serve immediately – do not hold overnight. Makes 2 cups.
