Mississippi Mud Cake from Tyler Texas

  • Yield 12 servings

A chocolate lover's dream.


2 sticks butter or margarine
1/2 cup cocoa
1 1/2 cups all-purpose flour
pinch salt
2 cups sugar
4 eggs, slightly beaten
1 1/2 cups chopped nuts
1 teaspoon vanilla
Miniature marshmallows
1 box powdered sugar
1/2 cup whole milk
1/3 cup cocoa
1/2 stick softened butter or margarine


  1. Melt butter and cocoa together.  Remove from heat and stir in flour, salt, sugar and beaten eggs; mix well.  Add nuts and vanilla.  Spoon batter into a greased 13x9x2 inch cake pan.  Bake at 350F for 35 to 45 minutes.  Sprinkle marshmallows on top of warm cake and return to oven just to melt, not to brown.  Cover with chocolate frosting.
  2. For the frosting.  Combine sugar, milk, cocoa, and softened butter.  Mix until smooth and spread on hot cake.
