Mississippi Mud Cake

Ingredients

2 sticks Butter
2 cups Sugar
4 large Eggs
1 teaspoon Vanilla
1 teaspoon Baking powder
3 tablespoons Cocoa
1 1/2 cups Flour
1 1/2 cups Walnuts chopped
1 1/2 cups Coconut
7 fluid ounces Marshmallow creme
1 stick Butter
1 pound Powdered sugar
1/3 cup Cocoa
1/3 cup Cream
1 teaspoon Vanilla
1 pinch Salt

Instructions

  1. Cream butter and sugar.
  2. Add eggs one at a time with vanilla.
  3. Sift together: baking powder, cocoa and flour.
  4. Add to wet ingredients.
  5. Add nuts and coconut last.
  6. Bake in prepared 9 x 13" pan at 350, about 40-45min. Careful not to overbake.
  7. Remove from oven and spread with jar of marshmallow creme while still hot.
  8. Set aside to cool, while you make the frosting. Marshmallow creme spreads and develops a dry top.
  9. When thoroughly cool frost and enjoy!
