Mint Simple Syrup


1 1/2cups packed fresh mint leaves
1cup sugar
1cup water


  1. In a small saucepan combine sugar, mint leaves and water and bring to a boil. Stir until sugar is dissolved. Allow to simmer 2 minutes or until the consistency is syrupy. Remove from heat. Let mint leaves continue to steep until syrup reaches room temperature. Using a sieve, separate syrup from mint leaves.
