Mini-Chip Cookies

  • Yield 3 dozen


16 tablespoons butter (2 bars) melted
1 cup brown sugar, light or dark
1/2 cup granulated sugar
2 teaspoons pure vanilla extract
2 -- eggs
2.5 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
12 ounces mini semi-sweet chocolate chips


Oven – 350 degrees F
line cookie sheets with parchment paper


In large saucepan, melt butter and allow to cool for a few minutes.  Stir in sugars and vanilla and let the mixture cool for about 10 minutes.  With wooden spoon, quickly beat in eggs, one at a time.  In separate bowl, combine flour with baking soda and salt.  Stir vigorously into butter mixture.  Stir in mini chips.

Drop batter by rounded tablespoon-fulls 2 " apart onto parchment-lined cookie sheets.  If you have a cookie scoop, all the better.  Slightly flatten tops of cookies.  Bake in center of 350-degree oven for 10-12 minutes.  Check for doneness (beginning to brown around edges, tops lose that wet look).  Remove from oven and allow to cool for five minutes.  Move cookies to wire rack to complete cooling.

Makes about 3 dozen 3" cookies.
