You are here: Home » Recipes » Mini-Chip Cookies Mini-Chip Cookies Recipe by AdirondackBaker Yield 3 dozen PrintEmail Ingredients 16 tablespoons butter (2 bars) melted1 cup brown sugar, light or dark1/2 cup granulated sugar2 teaspoons pure vanilla extract2 -- eggs2.5 cups all-purpose flour1 teaspoon baking soda1 teaspoon salt12 ounces mini semi-sweet chocolate chips Instructions Oven – 350 degrees F line cookie sheets with parchment paper Directions: In large saucepan, melt butter and allow to cool for a few minutes. Stir in sugars and vanilla and let the mixture cool for about 10 minutes. With wooden spoon, quickly beat in eggs, one at a time. In separate bowl, combine flour with baking soda and salt. Stir vigorously into butter mixture. Stir in mini chips. Drop batter by rounded tablespoon-fulls 2 " apart onto parchment-lined cookie sheets. If you have a cookie scoop, all the better. Slightly flatten tops of cookies. Bake in center of 350-degree oven for 10-12 minutes. Check for doneness (beginning to brown around edges, tops lose that wet look). Remove from oven and allow to cool for five minutes. Move cookies to wire rack to complete cooling. Makes about 3 dozen 3" cookies.
