Mighty Molasses Cookies

An old-fashioned favorite!


2/3 cup cooking oil
1 cup sugar
1 -- egg
4 tablespoons dark molasses
2 1/8 cups all-purpose flour
1 tablespoon ground ginger
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup sugar
1/2 teaspoon cinnamon


  1. Preheat oven to 350F.  
  2. In large mixing bowl, combine oil, sugar, egg, and molasses with electric mixer on medium speed.  In separate bowl, sift together flour, ginger, baking soda, 1 teaspoon cinnamon, and salt.  Add to sugar mixture, beating well to combine.  In small mixing bowl, combine 1/4 cup sugar and 1/2 teaspoon cinnamon.  Form teaspoon-sized balls of dough and roll in sugar-cinnamon mixture.  Place on parchment paper-lined baking sheet and bake 8 to 10 minutes.  Cookies will flatten during baking.
