Microwave Peanut Brittle

  • Yield: 10 to 12 servings


1cup raw peanuts
1cup sugar
1/2cup light corn syrup
1/8teaspoon salt
1teaspoon butter
1teaspoon vanilla extract
1teaspoon baking soda


  1. Combine peanuts, sugar, corn syrup, and salt in a 1-quart microwave-safe bowl with a handle and mix well.  Microwave on High for 8 minutes, stirring halfway through the cooking time.  Stir in the butter and vanilla.  Microwave on High for 2 minutes.  Add the baking soda and stir quickly until the mixture is light and foamy.  Pour onto a lightly greased baking sheet immediately, spreading thinly.  Let stand until set.  Break into pieces and store in a tightly sealed container.
