Microwave Peanut Brittle

  • Yield 12 pieces


1 cup sugar
1/2 cup white corn syrup
1 cup Spanish peanuts
1 teaspoon butter
1 teaspoon vanilla
1 teaspoon soda


  1. Put sugar in 1 1/2 quart microwavable casserole.  Add the syrup.  Mix and microwave on high for 4 minutes.  Stir in peanuts.  Microwave on high 4 minutes.  Add butter and vanilla.  Microwave on high 1 1/2 minutes.  Gently stir in soda. Pour onto buttered cookie sheet.  Break in to pieces when cool.
