Toss to coat the chicken breast evenly and put aside. Cut up one long hot, 2 garlic cloves and a half of red onion. In a skillet add 3 tablespoons of olive oil and these 3 ingredients. Stir fry until golden. Once golden add the chicken, salsa, taco sauce and apricot preserves. Cook for about 15 minutes. Now cook your white rice. When it is finished toss with 3 tablespoons of butter and salt and pepper to taste. Place onto a serving platter. After 15 minutes place your chicken over the rice and garnish with cubed green and yellow bell peppers and cubed water chestnuts. And there you have it. A meal that is savory, sweet, spicy, colorful and most important of all very easy to make.
