Mediterranean Cold Slaw

  • Yield 4 to 6 servings


3 cloves garlic
1 large lemon
1 medium Cabbage
1 large tomato
1 medium cucumber, peeled
1 small white onion
5 tablespoons Olive Oil


Peel and chop 3 large cloves of garlic. Add juice from 1 large squeezed lemon. Stir. Cube cabbage or cut into short strips. Chop all other vegetables (usually about the size of a nickel coin). Add all chopped vegetables to garlic-lemon mixture and combine. Pour Olive Oil over salad and toss thoroughly. Refrigerate at least 30 minutes. Stir again before serving. Can be served with warmed pita bread or flat bread.
