Sprinkle chicken with salt, paprika and pepper. Arrange in single layer, skin side up, in 9-by-13 inch baking pan. Mix together yellow mustard, spicy brown mustard, maple syrup, peach preserves, lemon juice and garlic. Set oven broiler at 500F and broil chicken for 15 minutes. Turn chicken and pour maple-mustard sauce over each leg quarter. Reduce oven temperature to 350F and bake about 30 minutes. Change oven back to 500F and broil 5 minutes more.
