New England Chicken Burgers

2pounds fresh ground chicken
1cup proscuitto sauteed and crumbled
2cups chunky applesauce
5tablespoons maple syrup
2teaspoons white pepper
1cup toasted walnuts
8slices of onion
8-- Bakery rolls


Heat grill pan.
Place ground chicken in large bowl and combine with applesauce-mix well
Add maple syrup, pepper and crumbled proscuitto. Mix well.
Form into 8 burgers.
Heat small pan and toast walnuts until brown-add apricot perserves and stir. Sat aside.
Place burgers on grill pan 3/4 minutes each side.
Remove-placing burgers onto buns
Spoon walnut/apricot sauce on top of burger…add sliced onion (optional)
