New England Chicken Burgers

- 2 pounds fresh ground chicken
- 1 cup proscuitto sauteed and crumbled
- 2 cups chunky applesauce
- 5 tablespoons maple syrup
- 2 teaspoons white pepper
- 1 cup toasted walnuts
- 8 slices of onion
- 8 -- Bakery rolls
Heat grill pan.
Place ground chicken in large bowl and combine with applesauce-mix well
Add maple syrup, pepper and crumbled proscuitto. Mix well.
Form into 8 burgers.
Heat small pan and toast walnuts until brown-add apricot perserves and stir. Sat aside.
Place burgers on grill pan 3/4 minutes each side.
Remove-placing burgers onto buns
Spoon walnut/apricot sauce on top of burger…add sliced onion (optional)
