Mango Soup

  • Yield: 4 cups

Mangos can also be found in jars in grocery stores and create a wonderful, creamy, yummy soup.

Ingredients

2cups peeled and chopped mango
1 1/2cups orange juice
3tablespoons sugar
2tablespoons lemon juice
1teaspoon vanilla extract
1cup plain nonfat yogurt

Instructions

  1. In food processor, combine mango, orange juice, sugar, lemon juice, vanilla and yogurt, mixing until smooth.  Transfer to the refrigerator and chill.
