Mango Soup

Mangos are an excellent source of beta-carotene and Vitamin C.
Mangos can also be found in jars in grocery stores and create a wonderful, creamy, yummy soup.
Ingredients
- 2 cups peeled and chopped mango
- 1 1/2 cups orange juice
- 3 tablespoons sugar
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1 cup plain nonfat yogurt
Instructions
- In food processor, combine mango, orange juice, sugar, lemon juice, vanilla and yogurt, mixing until smooth. Transfer to the refrigerator and chill.
