Baja Chicken and Mango Sandwiches

Cheesy Chipotle Mayo:
1/4cup mayonnaise
1/4cup soft goat cheese
1teaspoon minced canned Chipotle pepper
1 1/2tablespoons minced cilantro
1/8teaspoon kosher salt
4-- boneless, skinless chicken breast halves (6 ounces each)
6ounces plain, reduced fat yogurt
1-- ripe mango, peeled, pitted and chopped
1/2cup cilantro leaves
1teaspoon chopped canned Chipotle pepper
1/4teaspoon kosher salt
3tablespoons fresh orange juice
1tablespoon finely grated orange zest
1 1/2cups fresh bread crumbs
1/4cup grated Cotija cheese
3/4teaspoon kosher salt
3tablespoons olive oil
Marinated avocados:
12slices avocado
2tablespoons chopped red onion
2teaspoons fresh lime juice
1/2teaspoon olive oil
1/2teaspoon finely grated lemon zest
1/8teaspoon kosher salt
4-- split Kaiser rolls, lightly toasted
-- Cilantro, orange and lime slices, for garnish


To make the Cheesy Chipotle Mayo, place mayonnaise, goat cheese, Chipotle,
cilantro and salt in a small bowl and mix until blended. Cover and refrigerate
until serving.

Pound chicken breasts to an even thickness. Place yogurt, mango, cilantro,
Chipotle, salt, orange juice and orange zest in a food processor or blender
and puree until smooth. Place in a food-safe zip top bag along with the
chicken. Seal bag and marinate in the refrigerator for 30 minutes. In a
shallow dish or pie plate combine the bread crumbs and Cotija cheese. Remove chicken from marinade and discard marinade. Sprinkle chicken evenly with 3/4 teaspoon salt and then dredge in the crumb mixture, pressing so crumbs adhere. Heat 3 Tablespoons oil in a large skillet over medium heat until hot. Add the chicken and cook for 4 to 5 minutes per side or until chicken is cooked through.

Place the avocado slices in a shallow dish and sprinkle with onion. Whisk
together the lime juice, olive oil, lemon zest and salt and drizzle over the
avocado slices.

To assemble the sandwiches, spread equal amounts of the Mayo onto the cut
sides of the rolls. Onto each roll bottom place a cooked chicken breast, an
equal amount of the marinated avocados, and a roll top. Garnish with cilantro, orange and lime slices, if desired.
