Mac and Joe with Bechamel Sauce

The comforting flavors of mac 'n cheese and sloppy Joes collide in this heavy duty casserole.

Ingredients

Sloppy Joe
4 cups diced red onion
4 cups diced green pepper
4 cups diced red pepper
4 pounds ground beef
2 tablespoons finely chopped garlic
1 tablespoon salt
1/2 tablespoon black pepper
Crushed red pepper flakes, pinch
1 tablespoon sweet paprika
2 cups canned, diced tomatoes with juice
3 tablespoons Worcestershire sauce
1/2 cup tomato paste
2 cups ketchup
Bechamel Sauce
5 tablespoons unsalted butter
4 tablespoons all purpose flour
4 cups whole milk, room temperature
1 tablespoon salt
1/4 cup Coleman's mustard powder
1 teaspoon black pepper
Macaroni and Cheese
4 cups bechamel sauce
6 cups grated sharp yellow cheddar
2 cups grated sharp white cheddar
1 cup grated gruyere cheese
1/2 pound Velveeta
2 tablespoons grated parmesan cheese
1 tablespoon hot sauce
2 tablespoons Worcestershire sauce
1/2 cup heavy cream
12 cups cooked pasta, like elbows or cavatappi

Instructions

Sloppy Joe

  1. Add beef to a large, hot skillet and cook until beef is cooked through but not brown.
  2. Remove beef with a slotted spoon, leaving fat behind. Add onions, green peppers and red peppers and cook until soft. Stir often for about 10 minutes.
  3. Add garlic and stir for another 5 minutes. Return beef to pan along with all other ingredients except ketchup.
  4. Stir and cover. Reduce heat to a simmer and cook slowly for one hour.
  5. Remember to mix often. Add ketchup and continue cooking for 10 minutes more.

Bechamel Sauce

  1.  Melt butter in a sauce pan over medium heat. Add flour slowly and whisk until smooth. Cook for about 5 minutes.
  2. Add mustard powder,salt and pepper and whisk well.
  3. Add milk slowly, whisking constantly.
  4. Bring to a slow simmer and cook for 10 minutes, whisking constantly. Set aside while assembling macaroni and cheese.

Macaroni & Cheese

  1. Preheat oven to 400F.
  2. Add all ingredients except the pasta.
  3. Put in oven and cook until cheeses are melted, about 10 minutes. Stir often. Add pasta and mix very thoroughly.
  4. Cook for 5 minutes and then stir well. Cook for 10 minutes more, or until top is golden and sides are bubbling.
  5. Remove from oven and let rest for 5 minutes before serving.

To serve use individual bowls. Spoon mac and cheese and sloppy joe side by side. Sprinkle mac and cheese with breadcrumbs if desired.
