Luscious Lemon Bars
- Yield: 12 to 15 servings
- 1cup butter, softened (do not use margarine)
- 1/2cup powdered sugar
- dash salt
- 2cups flour
- 4-- eggs, beaten
- 2cups granulated sugar
- 1/4cup flour
- 6tablespoons lemon juice
- -- Powdered sugar
- To make crust: Combine all crust ingredients in a bowl and mix well. Press flat into ungreased 9×13-inch pan. Bake at 350F for 15 minutes until lightly browned.
- To make filling: Combine flour and sugar. Mix in beaten eggs and lemon juice. Pour into slightly cooled crust and bake at 350F for 25 minutes or until set.
- Cool and sprinkle lightly with powdered sugar.
