Lucy’s Easy Chicken
- Yield 4 servings
Ingredients
- 1 tablespoon olive oil
- 4 medium chicken breast (think cutlets)
- 1 can artichoke hearts packed in water
- 1 large onion, chopped
- 1 to 4 clove garlic, mashed
- 1/2 cup sweet and hot chili sauce
- 1/2 cup white wine or chicken broth
- 1 cup cherry tomatoes, cut into halves
Instructions
- Heat olive oil in a large skillet. Add chicken and brown 1 to 2 minutes on each side. Remove from pan.Brown chicken in a large skillet
- Add remaining ingredients to pan and cook over medium heat until onions are translucent. Return chicken to pan. Cover and cook 5 minutes
Note: Serve over brown rice or mashed sweet potatoes.
