Lucy’s Easy Chicken

  • Yield 4 servings

Ingredients

1 tablespoon olive oil
4 medium chicken breast (think cutlets)
1 can artichoke hearts packed in water
1 large onion, chopped
1 to 4 clove garlic, mashed
1/2 cup sweet and hot chili sauce
1/2 cup white wine or chicken broth
1 cup cherry tomatoes, cut into halves

Instructions

  1. Heat olive oil in a large skillet. Add chicken and brown 1 to 2 minutes on each side. Remove from pan.Brown chicken in a large skillet
  2. Add remaining ingredients to pan and cook over medium heat until onions are translucent. Return chicken to pan. Cover and cook 5 minutes

Note: Serve over brown rice or mashed sweet potatoes.
