Lucky Beans

  • Yield 6 servings


2 cans Black Eye Peas
1 bunch parsley
1 small onion
2 cloves garlic
1 can vegetable broth
1 bunch green onions
1/4 pound beef log
1/4 cup olive oil
1 tablespoon balsamic vinegar
1 whole red pepper
3 cups brown or white rice
1 pinch shredded cheddar cheese
1 dash franks hot sauce


  1. Simmer olive oil and balsamic vinegar in a large saute pan.
  2. Add diced onions, red pepper, and crushed garlic cloves.
  3. Rinse the black eye peas and once the onion browns, add the peas.
  4. Add the vegetable broth and cubed beef log to the saute pan.
  5. Simmer the saute mixture until hot.
  6. Boil the rice in a seperate pot.
  7. When the rice is finished, add parsley and chopped green onions to the saute pan.
  8. Stir the saute ingredients and remove from heat when parsley is wilted.
  9. Take 1/2 cup of rice and place in a bowl.
  10. Spoon desired amount of saute ingredients on top of rice.
  11. Add a pinch of shredded cheese to top of that.
  12. Dash desired amount of hot sauce to finish on top.
