Lowfat French Chocolate Mousse
- Yield 6 servings
- 1 pound silken tofu
- 1/3 cup cocoa powder
- 2 tablespoons honey
- 3 ounces dark chocolate chopped
- 1.5 teaspoons vanilla extract
- 1 teaspoon espresso powder
In a double boiler, heat the dark chocolate pieces until melted, then add the vanilla and espresso powder.
In a food processor, combine the tofu, cocoa powder, and honey. Then add in the chocolate mixture from above.
Place mousse in the fridge for around 2 hours or until set.
Makes a great pie filling, or dessert on its own!
