Lime Ice Cream

Try this easy recipe for a tasty summer-time treat.


4 -- eggs
1 cup sugar
1 cup light corn syrup
2/3 cup fresh lime juice
2 teaspoons lime rind, freshly grated
2 cups light cream, lightly whipped
3 cups heavy cream, lightly whipped


  1. Place eggs and sugar in large bowl of electric mixer; beat until lemon-colored.  Add corn syrup, lime juice and rind and cream.  Mix well.  Pour into ice-cream maker; freeze according to manufacturer's instructions.
