Lemon Sponge Pie

  • Yield 6 servings

Ingredients

1/4 cup butter, melted
1 cup sugar
3 tablespoons flour
3 -- slightly beaten egg yolks
1 -- lemon using juice and grated rind
1 1/2 cups milk
3 -- stiffly beaten egg whites

Instructions

  1. Blend butter with sugar and flour.
  2. Add egg yolks, lemon juice and grated rind
  3. Then add milk, fold in egg whites
  4. Pour into 9" pie shell.
  5. Bake in 450 oven for 10 mins.
  6. Reduce heat to 350 for 35 mins
  7. Cool and serve
