Lemon Sponge Pie
- Yield: 6 servings
- 1/4cup butter, melted
- 1cup sugar
- 3tablespoons flour
- 3-- slightly beaten egg yolks
- 1-- lemon using juice and grated rind
- 1 1/2cups milk
- 3-- stiffly beaten egg whites
- Blend butter with sugar and flour.
- Add egg yolks, lemon juice and grated rind
- Then add milk, fold in egg whites
- Pour into 9" pie shell.
- Bake in 450 oven for 10 mins.
- Reduce heat to 350 for 35 mins
- Cool and serve
