Lemon Sponge Pie

  • Yield: 6 servings


1/4cup butter, melted
1cup sugar
3tablespoons flour
3-- slightly beaten egg yolks
1-- lemon using juice and grated rind
1 1/2cups milk
3-- stiffly beaten egg whites


  1. Blend butter with sugar and flour.
  2. Add egg yolks, lemon juice and grated rind
  3. Then add milk, fold in egg whites
  4. Pour into 9" pie shell.
  5. Bake in 450 oven for 10 mins.
  6. Reduce heat to 350 for 35 mins
  7. Cool and serve
