Lemon Jell-O Cake

3 ounces pkg lemon Jell-O
3/4 cup cold water
4 large eggs
3/4 cup Canola oil
1 box lemon cake mix
2 cups confectioner's sugar
6 tablespoons ReaLemon juice


Preheat oven to 350 F. Grease and flour a 13 by 9 inch pan or use Baking Pam spray. Combine Jell-O, cold water, and eggs. Beat for 2 minutes. Add mix and oil and beat one minute, until smooth. Pour into prepared pan. Bake for 40 minutes. Prick hot cake with tines of large fork. Pour glaze (see below) over hot cake and into holes made by fork. Cool completely. Better if made the day before and sits a day before serving.


Mix two cups confectioner's sugar and 6 tablespoons ReaLemon juice with a big spoon in a quart/litre-sized Pyrex measuring cup.
