An incredible, luscious lemon ice that's virtually fat-free.
- 2 cups evaporated skimmed milk
- 1 cup sugar
- 2 tablespoons grated lemon rind
- 1/3 cup lemon juice (fresh preferred)
- In a bowl, combine together the evaporated skimmed milk, sugar, lemon rind, and lemon juice, stirring until well mixed. Pour into an 8-inch square pan. Freeze until firm.
