Lemon 2 Crust Pie
- Yield 6 servings
- 1 1/2 cups Sugar
- 2 tablespoons Flour
- 1/8 teaspoon salt
- 3 -- eggs
- 1/4 cup soft butter
- 1 teaspoon egg white
- 1 -- lemon
- 1 teaspoon lemon rind grated
- 1/2 cup water
Blend eggs, flour, sugar, salt and butter until smooth. Mix with a spoon.
Peel lemon, cut into paper thin slices. Makes 1/3 cup.
Add water, grated lemon rind and lemon slices to sugar mixture.
Place in unbaked pastry shell, top with crust..
Spread egg white on the top crust.
Sprinkle with sugar and cinnamon.
Bake at 375 for 30-35 Minutes.
