Key West Black Beans

  • Yield 8 servings

For all you Black Bean lovers, these are the best!

Ingredients

1 pound black beans
1 quart cold water
6 -- garlic cloves, minced
2 -- bell peppers, slivered
2 large onions, minced
2/3 cup olive oil
2 -- bay leaves
1 teaspoon salt
1 tablespoon vinegar
1 tablespoon sugar
-- Cooked white rice

Instructions

  1. Soak beans overnight.  Rinse.  Cover with cold water and boil 1 hour.  Add remaining ingredients except vinegar and sugar.  Cook slowly 4 hours or until beans begin to thicken.  Add vinegar and sugar just before serving.  These beans are the best if cooked the day ahead.  Serve on rice with smoked pork, chops, ham or sausage.
