PrintEmail Ingredients 1 pound black beans1 quart cold water6 -- garlic cloves, minced2 -- bell peppers, slivered2 large onions, minced2/3 cup olive oil2 -- bay leaves1 teaspoon salt1 tablespoon vinegar1 tablespoon sugar -- Cooked white rice Instructions Soak beans overnight. Rinse. Cover with cold water and boil 1 hour. Add remaining ingredients except vinegar and sugar. Cook slowly 4 hours or until beans begin to thicken. Add vinegar and sugar just before serving. These beans are the best if cooked the day ahead. Serve on rice with smoked pork, chops, ham or sausage.
