Key West Black Beans

  • Yield: 8 servings

Ingredients

1pound black beans
1quart cold water
6-- garlic cloves, minced
2-- bell peppers, slivered
2large onions, minced
2/3cup olive oil
2-- bay leaves
1teaspoon salt
1tablespoon vinegar
1tablespoon sugar
-- Cooked white rice

Instructions

  1. Soak beans overnight.  Rinse.  Cover with cold water and boil 1 hour.  Add remaining ingredients except vinegar and sugar.  Cook slowly 4 hours or until beans begin to thicken.  Add vinegar and sugar just before serving.  These beans are the best if cooked the day ahead.  Serve on rice with smoked pork, chops, ham or sausage.
