Key Lime Pie with No Roll Crust
- Yield 8 servings
- 1-1/2 cup flour
- 2 tablespoons sugar
- 1/2 cup oil
- 1 teaspoon almond extract
- 2 tablespoons milk
- 1 8oz packages softened cream cheese
- 1 14oz cans sweetened condensed milk
- 1/2 cup key lime juice
- 3 -- egg whites
- 1/4 teaspoon cream of tartar
- 6 tablespoons sugar
- 1/2 teaspoon almond extract
Mix flour & sugar in bowl. Mix together oil, extract & milk. Add to bowl & mix well with a fork. Press into 9" pie plate using fingers (no need to roll out). Bake at 375 until lightly browned, about 10-15 minutes.
Beat cream cheese. Add milk until well blended & smooth. Slowly add juice & mix well. Pour into cooled crust.
Beat egg whites & cream of tartar until foamy. Beat in sugar one tablespoon at a time. Continue beating until stiff & glossy. Do not under beat. Beat in extract. Spread onto filling and bake in pre-heated oven at 350 about 10 minutes, until lightly browned. Cool at room temp, then store in refrigerator.
