Kale Salad with Cashews

  • Yield 6 servings


1 bunch Dinosaur Kale
1 cup shredded carrots
1/2 whole avocado
3 tablespoons fresh lemon juice
1/2 cup crush cashews
2 tablespoons soy sauce


  1. Wash and separate kale leaves from the kale ribs.
  2. Thinly slice the kale.
  3. Combine all the ingredients (except the nuts) and mash together with fingers until kale is completely covered.
  4. Set kale salad aside on the counter for 30 minutes to let let kale soften.
  5. Add cashews.
