Kale and Potato Pie

  • Yield 6 servings


1 tablespoon olive oil
1/2 onion, chopped
1 clove garlic, chopped
1 grated potato
1 grated sweet potato
1 dash bunch kale, chopped
1 pinch pepper
1 pinch salt
1/2 cup any grated cheese
1 bread or pizza dough
1/4 cup butter


  1. Preheat oven to 375 degrees.
  2. Saute the onions.  Add the grated potatoes and kale.
  3. Divide  dough into balls about the size of an ice cream scoop and roll them out like pizzas, two for each pie.
  4. Scoop filling on the bottom shell, cover with cheese and another shell and pinch the edges together.
  5. Spread melted butter (or egg, or water) over the shell (optional) and bake till they are brown.
  6. They are good warm or cold.  They pack well as a sandwich.
