Jerk Pork Bites

Ingredients

1 1/2pounds boneless pork loin, cut into 1-inch cubes
2/3cup vegetable oil
1/3cup fresh lime juice
2tablespoons cider vinegar
1 1/2tablespoons thyme
1tablespoon brown sugar
1tablespoon ground allspice
1tablespoon nutmeg
2teaspoons black pepper
1 1/2teaspoons salt
1teaspoon cinnamon
1/2teaspoon cayenne
1/4teaspoon ground cloves
2/3cup onions, chopped
2-- jalapeno chiles, seeded and minced
3cloves garlic, minced

Instructions

  1. Place pork in 1/2-gallon self-sealing plastic bag. Combine oil, lime juice and vinegar; add sugar, seasons, onion and garlic. Mix until blended. Pour over pork. Seal bag and marinate in refrigerator 8 to 12 hours or overnight.

  2. Drain pork; discard marinade, and place meat in a single layer, not touching, in a shallow baking pan and roast at 350F. for 25-30 minutes, until pork is tender. Remove to serving platter and serve hot.
