Jeff Davis Pie
- Yield 8 servings
- 2 cups Sugar
- 1/2 cup Butter (LESS 1-1/2 Tablespoons)
- 1 tablespoon Vanilla
- 4 Eggs
- 1 tablespoon Flour
- 1/4 teaspoon Salt
- 1 cup Milk
- Cream together 2 cups sugar and ½ cup (minus 1-1/2 tablespoons) butter. Add to creamed mixture 1 tablespoon flour, ¼ teaspoon salt, 1 Tablespoon vanilla, and mix well. Add 4 egg yolks, one at a time, mixing after each, then slowly stir in 1 cup milk.
- Bake in preheated 450 oven for 10 minutes, then reduce heat to 350, baking for 40-45 minutes, just until knife inserted in center comes out clean. DO NOT allow to overbake. Crust edges may need protecting after first 30 minutes.
*VARIATION: 1 ounce melted unsweetened chocolate may be added after eggs and before milk.
