Stir-Fry Chicken Japanese Style

Ingredients

-- Japanese hot chicken stir fry 0ver beef flavored Jasmine rice
3tablespoons extra virgin olive oil
4large boneless skinless chicken breasts pounded flat and julienne into thin strips
1-- batch of Japanese marinade
1small to medium red pepper cut julienne style strips
1small to medium green bell pepper cut julienne style strips
1small red onion chopped or diced
1/2-- head Nappa cabbage rough chopped
1/2-- lb fresh mushrooms sliced
1large tomato diced

Instructions

Marinade
6 Tlb. Rice vinegar
6 Tlb. Sriracha Hot chili sauce (you can find in local supermarket in Japanese or Asian section any brand is fine I just use this brand it is easy to find)
3 Tlb of minced garlic in a jar including the garlic oil that it is packed in
1 Tlb. Soy sauce
1 tsp. fresh ginger zested
1 tsp. five spice
Place all the above ingredients into a bowl and whisk together. Place chicken in the marinade and cover let stand for about 30 minutes or longer is just fine.

In a large skillet over high heat place olive oil. When oil is hot place the chicken and all the marinade into the hot pan cover and let cook for one minute and then turn and recover and allow cooking for one more minute. Now add red and green peppers, onions and tomatoes stir well and cover allow cooking for three minutes. Lastly add cabbage and mushrooms stir well and cover for about three to four more minutes then remove from heat. Place rice on the plate and place a nice amount of hot chicken over rice. Garnish with sweet orange slices and fresh parsley. A nice flavor with a southern kick.
