Chicken and Broccoli Cheese-Bake

- 2 pounds Cut/Precooked Broccoli
- 2 pounds Cubed raw Chicken Breast
- 2 cans Cream of Chicken soup
- 1 cup Mayonnaise
- 3 teaspoons Lemon juice
- 1 cup Shredded Monterey Jack Cheese
- 1 cup Bread crumbs
- cup Sherry or White Merlot wine
- 5 tablespoons Butter
- -- Salt & Pepper; several shakes
Pre-prep mix the Chicken soup, mayonnaise and lemon juice in a
microwavable dish; heat on medium setting for 2-1/2 minutes mix well when done.
Also melt 2 tablespoons of butter and mix in the breadcrumbs. Set both aside for later.
Melt remaining butter in frying pan over medium-high heat, as butter
melts add the wine. Let butter finish melting and immediately add chicken. brown well on all sides adding salt & pepper as it cooks.
While chicken is cooking preheat oven to 350 degrees and grease bottom of a 9"x 13" glass cooking dish.
Place cooked broccoli in dish in a single layer and chicken over it when done. Spread soup/mayo mix over chicken/broccoli, spread shredded cheese evenly and then top with breadcrumbs. Bake for 40 minutes.
