Indonesian Sambal

A sambal is a fiery mixture served with Indonesian dishes. The classic sambal is Sambal Oelek, made with tiny bird chilies. You can use any chili pepper you like.
Ingredients
- 1/2 cup chili peppers, halved and seeded, if desired
- 5 -- garlic cloves
- 1 teaspoon sugar
- 1 teaspoon kosher or sea salt
- 1 tablespoon white vinegar
- 1 tablespoon lime juice
Instructions

Place all ingredients in a food processor fitted with the metal blade or a blender and blend or process until smooth. Place in a jar with a tight-fitting lid and refrigerate up to two weeks. Makes about 1 cup.
