Classic Southern hushpuppies handle a variety of flavors and toppings, from honey to hot sauce.

Hush Puppies

35 ounces cornmeal
35 ounces all purpose flour
2 ounces salt
10.5 ounces sugar
2 ounces baking powder
7 eggs
5 1/2 cups milk
11.5 ounces butter, melted


  1. Mix dry ingredients in pastry standing mixer.
  2. Combine wet into dry ingredients and mix until there are no more large lumps.
  3. Fry in 1.5 ounce portions at 350F until the hush puppy is golden brown and cooked through. Season with salt and pepper.
