Huevos Acapulco

Ingredients

1-- English muffin, split
2slices tomato
1/2cup grated Monterey Jack cheese
2-- poached eggs
1/2cup guacamole
1/2cup sour cream
2tablespoons green chili salsa

Instructions

  1. Toast muffins lightly.  Top with tomato and cheese.  Run under broiler and melt cheese quickly.  Top with poached eggs, guacamole and mixture of sour cream and salsa.  Run quickly under broiler to warm.

Note:  Poached eggs can be prepared in the microwave.  Add 1 tablespoon milk in the bottom of a custard cup.  Drop egg in and puncture yolk with fork.  Cover with paper.  Cook on high 60 seconds.  To do more eggs, add 60 seconds per egg and rearrange cups at 60 seconds.
