PrintEmail Ingredients 1 -- English muffin, split2 slices tomato1/2 cup grated Monterey Jack cheese2 -- poached eggs1/2 cup guacamole1/2 cup sour cream2 tablespoons green chili salsa Instructions Toast muffins lightly. Top with tomato and cheese. Run under broiler and melt cheese quickly. Top with poached eggs, guacamole and mixture of sour cream and salsa. Run quickly under broiler to warm. Note: Poached eggs can be prepared in the microwave. Add 1 tablespoon milk in the bottom of a custard cup. Drop egg in and puncture yolk with fork. Cover with paper. Cook on high 60 seconds.
