PrintEmail Ingredients 8 medium red potatoes6 slices bacon1 cup chopped onion1 cup chopped celery3 tablespoons flour2/3 cup water2/3 cup vinegar1 tablespoon salt2/3 cup sugar Instructions Boil potatoes until tender. Drain off water and set aside to cool. Fry bacon until crisp, reserving 1/4 cup grease. In large skillet saute onion and celery in bacon grease until opaque, about 2 minutes. Sprinkle with flour and stir. Add water and vinegar, stirring until mixture boils. Stir in salt and sugar and remove from heat. Peel potates and slice into 2 quart baking dish. Pour on dressing, add crumbled bacon and mix lightly. Bake uncovered at 350F for 30 minutes.
