Hot German Potato Salad with Bacon
- Yield 10 to 12 servings
This potato salad makes a wonderful side dish to smoked or barbecued meat.
Ingredients
- 8 medium red potatoes
- 6 slices bacon
- 1 cup chopped onion
- 1 cup chopped celery
- 3 tablespoons flour
- 2/3 cup water
- 2/3 cup vinegar
- 1 tablespoon salt
- 2/3 cup sugar
Instructions
- Boil potatoes until tender. Drain off water and set aside to cool. Fry bacon until crisp, reserving 1/4 cup grease. In large skillet saute onion and celery in bacon grease until opaque, about 2 minutes. Sprinkle with flour and stir. Add water and vinegar, stirring until mixture boils. Stir in salt and sugar and remove from heat. Peel potates and slice into 2 quart baking dish. Pour on dressing, add crumbled bacon and mix lightly. Bake uncovered at 350F for 30 minutes.
