Hot Chicken Brunch Casserole

A crunchy casserole dish, filled with vegetables and topped with cheese and fried onion rings

Ingredients

4 chicken breasts
1 cup water
1 bay leaf
5 celery leaves
2 cups celery, chopped
1 cup water chestnuts, sliced
1/2 cup mushrooms, sliced
1/2 cup slivered almonds
2 tablespoons minced onions
1/2 can cream of chicken soup
1 cup mayonnaise
1 cup sour cream
2 tablespoons lemon juice
salt and pepper to taste
1 cup shredded Cheddar cheese
1 cup French's fried onion rings

Instructions

  1. Simmer chicken breasts, water, bay leaf, and celery leaves together for 30 minutes, then set aside to cool. Then, mix together celery, water chestnuts, mushrooms almonds, onions, cream of chicken, mayonnaise, sour cream, lemon juice, and salt and pepper.  Chop the chicken and add it to the mixture.  Spread into 13 by 9 inch baking dish.  Top with cheddar cheese and fried onion rings.  Bake in oven for 30 minute at 350 degrees.  Serves 8 to 10.
