Honey Pecan Salmon

Ingredients

1/4cup extra virgin olive oil
3tablespoons honey, plus additional for drizzling
4 (4- to 6-ounce) salmon filets
1 1/2cups chopped pecans
1/2tablespoon dried parsley or 1 1/2 tablespoons chopped fresh parsley
Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425 degrees. Lightly grease a 13 x 9-inch baking dish. Mix the olive oil with 3 tablespoons of the honey in a medium-size bowl. Dip each filet in the honey mixture, and then roll and press it in the pecans. Place in the prepared baking dish. Sprinkle with the parsley, salt, and pepper. Drizzle a bit more honey over each filet. Bake for 10 minutes, until the fish flakes with a fork.
