Honey of a Muffin

A delicate breakfast muffin that’s very agreeable first thing in the morning, and a dandy companion to fresh fruit and coffee or tea. Sweeten it with honey or maple syrup, as you like – each imparts its own subtle flavor. This recipe is so easy, as child could do it.
Ingredients
- 1-3/4 cup all purpose flour
- 1/2 cup oatmeal
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped California walnuts
- 1 cup water
- 1/2 cup honey or maple syrup
- 1/2 cup canola or vegetable oil
- 2 -- egg whites
Instructions

Preheat the oven to 375F and butter 12 muffin cups, or spray them with non stick coating.

In a medium bowl place the flour, oatmeal, baking powder, baking soda, salt and walnuts. Stir and toss together until completely mixed; set aside.

In another bowl whisk together the water, honey or maple syrup, oil and egg whites. Add to the combined dry ingredients and stir just until the batter is smooth and blended.

Spoon into the prepared muffin tins, filling each cup until about ½ full. Bake for 15-18 minutes, or until a toothpick inserted in a muffin comes out clean.

Cool in the pan about 5 minutes, then turn out onto a rack.
