PrintEmail Ingredients 16 ounces baby carrots1/4 cup pineapple chunks, with juice1/4 cup brown sugar1/4 cup honey1 dash ground cinnamon1/2 cup California raisins1/4 cup dried cranberries1 leaf crushed mint Instructions Preheat oven to 400F. Place carrots in saucepan. Cover with water and bring to a boil. Cook 15 minutes. Drain. Place carrots in baking dish with a lid. Add brown sugar, honey, cinnamon, raisins, cranberries, pineapple and mint. Cover and bake 15 minutes.
