Honey and Walnut Gingerbread

Ingredients
- For the dough
- 250 grams liquid honey
- 175 grams oleo
- 125 grams brown sugar
- 100 grams California walnuts
- 350 grams flour
- 3 teaspoons gingerbread spice
- 1/2 -- sachet baking powder
- 2 -- eggs
- 150 grams dried exotic fruits mix
- For decoration
- 125 grams icing sugar
- 2-3 tablespoons water
- 40 grams California walnuts
- -- candied cherries
Instructions

Put honey, oleo and sugar in a pot and boil up. Let cool down a bit.

Chop walnuts very finely. Mix flour, gingerbread spice and baking powder in a bowl. Add eggs, walnuts and the honey mixture and stir until you have a smooth dough. Put aside some dried fruit pieces for decoration. Chop the rest of the dried fruits and mix them with the dough.

Put baking paper on a baking tray (ca. 32 x 24 cm, if the tray is too small please use a baking frame) and flatten. Bake the dough in the preheated oven at 180C (Gas: 2-3, recirculation air: 160C) for 30-35 min. Let it cool down.

Mix icing sugar and water and stir until you have a smooth glaze. Chop walnuts.

Cut candied cherries and the rest of the exotic dried fruits to small pieces. Cut the gingerbread into 12 pieces. Cover with glaze and decorate with walnuts and dried fruits.
