Homemade Mayonnaise

  • Yield: 1 cups


1-- egg
1tablespoon lemon juice
1tablespoon vinegar
1/4teaspoon salt
1/8teaspoon cayenne pepper
1/8teaspoon paprika
1/4teaspoon dry mustard
1cup vegetable oil


  1. In a blender or food processor with a plastic blade, mix all ingredients except oil.  Add oil very slowly while machine is running.  Scrape sides of container and mix three to four seconds longer.  Chill.  As a variation, avocado, horseradish, or toasted, dried onion flakes can be added.  Chill overnight to blend flavors.
