Home-Style Meatloaf

  • Yield: 8 servings

Ingredients

1tablespoon olive oil
3/4cup finely minced onion
4 cloves garlic, minced
1pound ground round
8ounces pureed silken firm tofu
1/2cup quick-cooking oats
1teaspoon salt
1teaspoon freshly ground black pepper
1/2teaspoon dried thyme leaf
1tablespoon soy sauce
1/4cup tomato sauce
1teaspoon Dijon mustard
2teaspoons brown sugar
1/4cup soy nuts

Instructions

  1. Preheat oven to 350F.
  2. Heat olive oil in over medium high heat, add onion and garlic, sauté 2 minutes. In a large bowl, combine onion mixture, ground round and remaining ingredients. Mix well. Place mixture in 9 x 5-inch loaf pans. Bake 55 minutes or until mixture reaches 165F.
