Save this salad for when you have really ripe, juicy tomatoes. Ingredients 6 ripe tomatoes cut into wedges3 bell peppers, slivered (combination of green, red and yellow)1 Vidalia onion, slivered1 cup pitted black olives, drained1 pound fresh mozzarella ciliegineDressing:1/3 cup extra-virgin olive oil or vegetable oil1/4 cup red wine vinegar1/4 cup chopped fresh parsley or cilantro1/4 cup chopped green onions1 teaspoon salt1/4 teaspoon pepper1 teaspoon sugar1 tablespoon chopped fresh basil (or 1 teaspoon dried)1 tablespoon chopped fresh marjoram (or 1 teaspoon dried) Instructions Place tomatoes, peppers, onions and olives in a glass serving bowl. Add cheese. Combine dressing ingredients in screw-top jar and shake well. Pour dressing over vegetables and cheese. Cover and let stand at room temperature 3 to 4 hours.
