Herbed Leg of Lamb

Ingredients
- 1 garlic clove, crushed
- 1teaspoon salt
- 2tablespoons olive oil
- 1 (5 to 6-ounce) pound leg of lamb
- 1teaspoon dried thyme
- 1teaspoon dried margoram
- 1teaspoon dried rosemary
- 2tablespoons flour
- 1cup white wine
- 1cup water
Instructions
- Mix the garlic, salt and olive oil in a small bowl. Spread over the lamb. Sprinkle with the thyme, marjoram, rosemary and flour. Place on a rack in a shallow roasting pan and add the wine and water to the pan. Roast at 325F for 2 1/2 hours, basting frequently with the pan juices.
